The Royal Pavilion Welcomes Chef De Cuisine Lau Yam Chuen

HO CHI MINH CITY, Vietnam (Nov. 14, 2021), The Royal Pavilion is proud to introduce Chef de Cuisine Lau Yam Chuen as leader of the luxury Chinese restaurant in Ho Chi Minh City, Vietnam. A native of Hong Kong, Chef Lau brings his expert knowledge and unique style to the kitchen of the acclaimed restaurant. 

Chef Lau Yam Chuen was born and raised in Hong Kong with his culinary career beginning when he was just 16 years old. For the past three decades, Chef Lau has worked in famous restaurants throughout Hong Kong, in particular he was Sous Chef at the Miramar Hak Ka Hut. In 2018, Chef Lau was a member at the Hong Kong Ying Jee Club when this restaurant received a 2-star Michelin rating. Chef Lau’s specialties are double-boiled chicken soup with fish maw and pan-fried baby lobster with spring onion, both presented in refined style at The Royal Pavilion.

With his arrival at The Royal Pavilion, Chef Lau and his team have revamped the menu to be a true celebration of authentic Cantonese fare, raising the bar with its masterful preparation and exquisite presentations of delicacies such as abalone, sea cucumber and bird’s nest, alongside must-haves of poached A4 Wagyu beef with superior broth, Peking duck and honey-glazed barbequed pork.

For seafood aficionados, the menu features an expansive selection, including specialties of stir-fried garoupa fi­llet with black truffle and wok-fried shrimp with chili and basil. And for vegetarians, the options are just as extensive, from crispy bean curd to sautéed kailan with ginger sauce.

At The Royal Pavilion, skilful Hong Kongese chefs present the finest Cantonese food to be found in all of Vietnam. Jade stones, vermillion and traditional Chinese scenes painted on gold leaf are juxtaposed with chairs and tableware designed by Provasi of Italy to accentuate the restaurant’s stately ambiance.

The main dining room looks out on to Nguyen Hue Boulevard and a row of age-old shop houses while a series of nine private dining rooms offer elegant spaces for intimate private parties. 

The restaurant’s elegant chairs were custom-designed by Provasi, reflecting an Asian-inspired palette of regal red and gold as accentuated by the finest Italian craftsmanship.
